The project
P’S Delicacies, Surat is the new outlet of a well-known pizza brand that began in Bardoli. The design reimagines the restaurant through a contemporary interior language while retaining the brand recall that regular patrons associate with it. Rather than replicating the colourful character of the original outlet, the Surat space interprets the brand through restraint. As principal architect Sagar Shah explains, “The idea was not to replicate the Bardoli outlet but to reinterpret the brand by letting a single strong element—its red identity—shape an entirely new spatial narrative.”

The site
Located on the ground floor of International Wealth Centre on VIP Road in Vesu, Surat, the project occupies a commercial unit with strong road visibility. The space was received as a bare-shell interior with standard services and basic flooring, offering little spatial character at the outset. Front glazing allows natural light to enter the restaurant, influencing seating layouts and material decisions. The available ceiling height also opened up opportunities for an exposed ceiling treatment that became integral to the design.

The brief
Functionally, the brief required efficient seating layouts, a visible service counter and a welcoming dining environment that could comfortably accommodate customers. Aesthetically, the client sought a clear distinction from the Bardoli outlet’s vibrant colour palette while still retaining the brand’s bold red identity as a recognisable element within the space.
The design intent
The design philosophy centres on reinterpretation rather than repetition. Instead of carrying forward the entire colour scheme of the original restaurant, the design extracts the brand’s red and allows it to anchor the spatial experience.
Neutral greys, blacks and earthy tones form the base palette, enabling red to emerge as the architectural and emotional focal point of the restaurant. As co-principal Ashish Patel notes, “By restricting the palette and allowing red to lead the composition, the space gains a strong identity while still feeling calm, raw and contemporary.”

The civil intervention
The existing shell was strategically reorganised to improve functionality and circulation. The kitchen was positioned at the rear of the restaurant, aligned with a secondary service entry at the back of the building to ensure smooth operational movement. Guest toilets were placed according to the building’s drainage layout. At the entrance, a small waiting area and pickup counter create a transitional foyer that eases guests into the dining space.
The spatial configuration
From the entrance foyer, visitors move into the main dining area where seating is arranged around a central highlight element. Circulation paths remain clear and direct, allowing easy access to the service counter while maintaining a comfortable dining environment.

The material palette
Material choices reinforce the restaurant’s restrained yet expressive identity. The flooring is finished in rugged black basalt stone cut into smaller modules, creating a subtle grid pattern that introduces texture and rhythm while ensuring durability.
Overhead, a bold red metal grid ceiling runs across the restaurant, becoming one of the defining architectural features of the space. Exposed ducts and services are finished in grey, reinforcing the project’s controlled industrial character.
Walls are treated with textured neutral finishes, while one feature wall carries an engraved logo kept tonal and understated. Seating consists of custom furniture upholstered in dark olive green fabric, balancing the dominance of red while introducing warmth.
At the centre of the dining area, a custom red acrylic table acts as a sculptural focal point. Lighting throughout the restaurant is layered, combining warm ambient illumination with focused lighting to create depth and highlight the architectural elements.

The highlights
Several elements define the identity of the project: the restrained use of a single brand colour, the red metal grid ceiling that anchors the spatial experience, and the sculptural red acrylic table positioned at the centre of the restaurant. Subtle engraved branding integrated into the architecture and the illuminated entrance ceiling element further strengthen the restaurant’s visual presence along the street.
The challenges
One of the primary challenges was maintaining strong brand recall while shifting away from the colourful language of the original Bardoli outlet. Achieving this balance required careful restraint in the use of red and a neutral material palette that could support it. The execution of custom acrylic elements and the red metal grid ceiling also required detailed coordination and on-site supervision to ensure the design intent translated accurately during construction.
